Coffee & Specialty Beverage Equipment
As iced coffee, dirty sodas, and customizable drinks gain popularity, facilities teams need a broader strategy for equipment uptime, sanitation, and preventive maintenance.

Cold dispensed beverages are now the second-largest convenience foodservice category, narrowly surpassing hot dispensed beverages, according to NACS. Product innovation, including dirty sodas, cold foam, flavored syrups, boba, and other mix-ins, is helping fuel that growth. NACS also reports that 61% of c-store patrons purchase cold coffee at least monthly, while 36% do so at least weekly.
For facilities leaders, this is more than a menu trend. A cold-forward beverage program depends on a connected equipment ecosystem that includes ice makers, cold-brew tanks, espresso and bean-to-cup machines, grinders, syrup systems, refrigeration, and water filtration. When one component fails, the customer experience and revenue opportunity can suffer with it.
A down ice machine, scaled boiler, or unsanitary syrup line is not simply a maintenance issue. It can affect product availability, beverage quality, customer trust, and sales.
The specific menu may vary by channel, but the equipment dependencies are remarkably similar. Facilities teams need a program that accounts for the entire beverage bar rather than managing each asset as an isolated work order.
| Channel | Beverage formats | Equipment the FM program must cover |
|---|---|---|
| Convenience | Iced coffee, dirty sodas, fountain drinks, and flavor add-ins | Ice, cold-dispense systems, bean-to-cup machines, water filtration, and sanitation systems |
| Grocery and cafe | Cold brew, iced espresso, and mix-in bars | Grinders, cold-brew tanks, milk refrigeration, espresso equipment, and filtration |
| QSR and restaurant | Iced lattes, drive-thru espresso, and limited-time flavors | Espresso and super-automatic machines, ice, water boosters, and milk refrigeration |
| Retail kiosk | Premium coffee and specialty drinks | Coffee machines, grinders, cold systems, ice, and water filtration |
| Risk area | What can go wrong | What to monitor |
|---|---|---|
| Ice and cold dispense | Low ice production, temperature issues, valve failures, and unavailable menu items | Production capacity, cleaning schedules, temperature, and repeat service calls |
| Bean-to-cup and espresso | Grinder wear, inconsistent extraction, milk-system issues, and machine downtime | Cycle counts, cleaning compliance, first-time fix rate, and equipment uptime |
| Water and scale | Poor beverage quality, scale buildup, reduced efficiency, and premature component failure | Water hardness, filter life, replacement history, and boiler condition |
| Syrups, mix-ins, and sanitation | Clogged lines, inconsistent portions, off-flavors, and sanitation risks | Line-cleaning frequency, dispensing accuracy, temperature, and sanitation records |
Benchmark the beverage program by location. Track equipment uptime, first-time fix rate, preventive maintenance completion, and 14-day callbacks alongside category sales and customer experience metrics.
Whether the setting is a convenience store, grocery cafe, restaurant, or retail kiosk, beverage performance depends on the same fundamentals: properly maintained equipment, clean lines and milk systems, reliable ice production, consistent water quality, and fast access to qualified technicians.
Preventive maintenance should reflect actual equipment use and local operating conditions. Grinder service can follow cycle counts, while filter replacement should account for water hardness and beverage volume. A standardized national calendar may be easy to administer, but it can miss the conditions that drive failure at individual locations.
Vixxo supports more than 150 makes and models and has managed more than 100,000 coffee equipment installations. Manufacturer relationships include BUNN, Franke, WMF, Curtis, Fetco, Schaerer, La Marzocco, and Thermoplan. Vixxo’s AI assistant helps technicians access diagnostic guidance in the field, while VixxoVerify evaluates labor, materials, parts, and repair scope to help control total cost of ownership. Together, experienced technicians, asset-level data, and real-time cost controls can improve consistency across a multi-site beverage program.

No. Grocery cafes, QSR drive-thrus, restaurants, and retail kiosks rely on many of the same assets, including ice machines, water filtration, refrigeration, grinders, espresso machines, and cold-brew systems. The menu and volume may differ, but the equipment risks often overlap.
A comprehensive program should cover ice production, cold-dispense valves, syrup and boba lines, milk systems, grinders, bean-to-cup and espresso machines, refrigeration, and water filtration. Maintenance frequency should reflect equipment volume, cycle counts, water quality, and manufacturer requirements.
Start with equipment uptime, first-time fix rate, preventive maintenance completion, response time, repair cost, and 14-day callbacks. Reviewing these measures by location and asset type can reveal recurring failures and help teams improve maintenance strategies.
